Ingredients:
1 box of jiffy corn bread mix (you can use your own cornbread mix if you like
2 Ears fresh golden or white corn
1/2 cup cheddar shredded
1 egg
2/3 cup of whole milk
1/2 cup diced ham
Directions:
Preheat oven to 400F. Make corn muffin mix with egg and milk. Mix together well. Slice corn from ears and add to cornbread mixture. Add shredded cheese and diced ham. Stir well and drop into muffin tin. Bake 15 to 20 min until golden and toothpick comes out clean. Let cool slightly in pan, then remove for serving.
The story:
I had leftover corn from last nights dinner and since I was making a ham tonight which would create some leftovers, I decided to slice off a couple steaks, dice them up and use them with the corn. Slather a pat of butter on them and wow…These came out delicious!
