Balsamic Garlic Pork Roast

Ingredients
1 large Pork Roast
3 Tbs Garlic (chopped
1 large onion (quartered)
1/3 cup Balsamic Vinegar
2 tsp Paprika
Salt and pepper
Vegetable oil
Directions:
Place Pork roast in a Ziploc bag with balsamic vinegar and marinate for 1 hour.
After on hour, Preheat oven to 425F and place quartered onion in bottom of roasting pan. Place Pork roast, fat side up on top.
Score the fat cap with the knife to allow for extra garlic penetration
Generously brush oil on top and sides of pork roast.
Spoon chopped garlic over the top
Sprinkle with Paprika, salt and pepper
Cook at 425F for 15 min, then reduce heat to 350.
Cook uncovered for 25min per lb. until internal temperature hits 145F
Remove from oven and cover with foil, let rest for 10 mins
Slice and enjoy

Variations – You can also cook veggies such as potatoes and/or apples with the roast if you prefer. However, I would add them after the 15 min high heat time so they do not burn or overcook.
