Cheesy chicken pasta skillet

Ingredients

1 small bag or box of bow tie or spiral pasta
1 jar of spaghetti sauce or your own homemade
1 cup of shredded mozzarella
1 small onion
1 rotisserie chicken (pulled apart from bones and diced)
1 cup of diced veggie of choice (zucchini, squash, etc.)
2 tbs fresh parsley
2 tbs shredded Parmesan cheese
2 tbs veggie oil

Directions:

Cook noodles according to package directions until al dente.
While pasta is cooking, add onion and chopped veggie to a large skillet and sauté on medium heat until tender, approx. 4 mins, stirring constantly.

Add diced chicken and the spaghetti sauce to the pan with the onions and Veg. reduce heat to medium low and slowly heat sauce and chicken.

Drain and add the pasta to the sauce.

Stir until heated through and slightly reduced, then add mozzarella, stirring to combine.

Top with fresh parsley and parmesan cheese if desired

Serve immediately

Options:

You can use any protein other than chicken, and you can also use it chopped, pulled or even in larger pieces if you prefer. You can also sub out the rotisserie chicken with canned diced chicken. If you don’t have enough flavor in your sauce, add a couple teaspoons of Italian seasoning.

The Story:
This is my “I have leftover stuff and need to use it” dish. It can also be classified as a “dump” dish. I had a bit of stuff left from making some pizza’s the night before and figured I would throw them together in a skillet and see what happened. It took less than 20 mins, used up my leftovers and tasted delicious
