Stuffed Green Peppers

Ingredients:

4 green peppers, halved and de-seeded

1 lb ground beef
2 cups of prepared brown rice
12 oz goat cheese
1 onion chopped
1 tbs worchestershire sauce
1 can of Rotel tomatoes and chilis
1 tbs minced garlic
1/2 cup shredded cheddar jack cheese

Directions:

Preheat oven to 375F

Brown ground beef and set aside.
Saute onions until soft. Add garlic to onions and cook an additional min.
Mix ground beef, onion/garlic mixture, rotel, Worcestershire, prepared rice, and goat cheese together until well incorporated.
Stuff pepper halves and place in a baking dish. Cover with foil and cook approx. 25 mins. Place shredded cheddar on top and return to oven, covered for an additional 5 mins until cheese melts.

Variations: stuff those suckers with whatever you want! Roast beef, chicken, bbq pork, or just grilled veggies!change your type of rice, or your cheeses.

The story:

I love veggie boats. Zucchini and peppers are my favorite. You can stuff lots of good things in that kind of vehicle and it will always taste good. It’s cheap, easy and fairly healthy. You can cook the peppers to whatever fineness you like. I prefer mine hot, and fairly firm. If you like them softer you can blanche them in advance, bake them with some water in the pan, or even microwave them for a few mins to pre-soften them.
