Ingredients
2.5 lbs. of Lean ground beef 80% or better
¼ cup Ketchup
2 Tbs mustard
4 Tbs Johnny’s garlic bread seasoning
2 tsp onion powder
1 medium yellow onion diced
2 cups seasoned bread crumbs
½ cup bacon bits
2 extra large eggs
1 cup whole milk
3 Tbs Worcestershire sauce
1 tsp Salt and 1tsp pepper
For Topping:
½ cup Ketchup
1 Tbs mustard
2 Tsp Red wine Vinegar
¼ cup brown sugar
Directions:
Preheat oven to 360F
Mix together topping in a small bowl and set aside.
Using a large bowl and your hands or an electric mixer with paddle attachment, mix all ingredients for meatloaf until well incorporated. In a 13×9 casserole pan shape meat into a loaf shape. Cover top with the topping mixture.
Bake uncovered 80 to 90 mins or to an internal temperature of 175F.
Remove and let set for 5 to 10 min, then slice and serve.
The Story:
I haven’t been a huge fan of meatloaf, but my kids did request it so I put ground beef on the shopping list and came up with this homestyle Zuco recipe. The addition of the Bacon, onion and milk keep this moist and give it a wonderful flavor. The slightly sweet and tangy sauce on the top is wonderful as a counter-play to the meat. Once you get things mixed up and put in the oven it’s a nice “hands-off” recipe. We typically serve it with mashed potatoes and corn on the cob. The best part is the recipe is enough that we can feed 5 of us and have a few leftovers for meatloaf sandwiches the next day. If you don’t want leftovers and have less than 5 folks, cut the recipe in half and reduce the cooking time to about 50 mins.
