Feeds 5 – 6
Ingredients
2lbs Beef (any kind – flank, chuck, rib eye, sirloin, etc.. cubed or sliced to your preference)
1 Onion, chopped
1 can Cream of Mushroom soup
1 bouillon cube
1 can beef consume soup (you can replace this with beef broth)
4 tbs butter
1 clove of garlic ( you can add additional garlic to your taste. I generally use 3 cloves chopped)
3 tbs flour
1 tbs ketchup
1/8 tsp pepper
½ tsp salt
1 ½ cup sour cream
Optional – 1 can of mushrooms and 2 tbs Worcestershire sauce
Directions:
Cube or slice beef and then brown in butter in large skillet.
Add onion, garlic, flour, salt, pepper and ketchup
Stir and cook for 1-2 mins until well blended and flour taste has cooked out
Add consume and bouillon cube, simmering until meat is tender. (this can take 5 to 10 mins or less depending on the type of meat)
Add mushroom soup and if using, add mushrooms and Worcestershire sauce
Cook an additional 5 mins, stirring occasionally
Lower heat and add sour cream, stirring to incorporate.
Serve over rice or noodles with a sprinkle of parsley.
Variations:
Add additional veggies if you like! Peas, carrots, broccoli or cauliflower. You can also serve over potatoes or sweet potatoes for something different. No sour cream? Use a bit of whipping cream or yogurt.
The Story:
I was honored last year to be the holder of the Burnell family cookbook. This is a collection of recipes actually printed on a dot matrix printer bound in a file folder/notebook that Scott Burnell’s mom used to make his favorite dishes. One of those is Beef Stroganoff. His mother used to make it for him and he brought out the cookbook in the hopes that I could try to replicate the recipe for a birthday dinner. I will admit I have strayed a bit by adding the Worcestershire sauce, additional garlic and mushrooms and have used broth instead of the consommé, but the general base has remained the same and always seems to be a hit no matter what replacements I may need to use. It has now been requested as something to put into our bi weekly dinner rotation and there are NEVER any leftovers. I hope to try out other recipes in this family cookbook collection and share them here in the future.
