Ingredients:
2tbs pine nuts
2tbs slice almonds
2tbs dried cranberries
2tbs sunflower seeds
2tbs pumpkin seeds (pepitas)
2tbs dried crispy onions
Directions: mix all in a bowl, place in a Tupperware or other closeable container for storage and enjoy!
Variations: use different nuts, chopped pecans, peanuts, walnuts, cashews, and try different dried fruit such as apricots, cherries or raisins. You can even add hard little bacon bits (dont use fresh in the mix for obvious reasons, but the crispy dehydrated ones work well.)
The story: I have always loved scrunchies on my salads. Never been much of a salad eater either, but when I have one I want more than just greens. I was buying a bag of “salad topper” at the store every now and then, but I recently ran out and with the new stay at home orders I started digging into what the ingredients actually were. Lo and behold, i had all of them in my pantry already! If you are like me you may keep a large variety of nuts and seeds in your stock along with dried cranberries or cherries. Mostly I use these for cooking or snacking. However, not wanting to go to the store for salad topper made me realize I could do my own. Ho early probably should have been doing it a while ago. Now I can also customize my favorite seeds and nuts in for some variety.
