Ingredients
4 chicken breasts
2 whole avocado
White or Brown rice (cooked)
1 tsp sesame seeds
T tsp garlic powder
½ cup soy sauce
Directions:
Mix garlic powder and soy sauce in a medium bowl.
Add chicken breasts and marinate, covered for at least 30 min or up to 2 hours.
While marinating, cook rice to your preference
Slice avocado
Remove chicken from marinade and grill, bake or pan fry chicken until juices run clear. This is about 8 min per side on the grill or 30 min in an oven at 375F. To pan fry, use 1 tbsp canola oil and place chicken in hot pan. Cook, turning once until juices run clear.
Slice or dice chicken to your preference, and serve over rice. Place half of a sliced avocado over each breast and sprinkle with sesame seeds.
Variations – Sprinkle with garlic herb mixture, or any powdered flavoring prior to cooking. Add a different marinade. Can also serve over noodles or mashed potatoes.
